To use probe control, plug the probe cord into the unit. Next, place the pot on the Control Freak Home and put the probe into whatever you are cooking. Then, select either thermometer, probe control, or probe control oil (for deep frying). Press ok, and then you are ready to go! Set the temperature to the temperature you’d like the food to reach. In Probe control and Probe control oil modes, you will see the actual temperature of the food and the set temperature. The actual temperature will drop when foods are added but will recover to the set temperature. The maximum temperature for probe control is 392F (200C). For higher temperatures, switch to pan control.
Probe Control Oil:
Probe Control™ oil automatically adjusts power when deep frying to return to the set temperature without overshooting. You will notice a drop in the temperature as food is added, but the oil will recover to the set temperature.
What is the difference between probe control and probe control oil?
Probe Control™ drives the cooker to reach and hold your desired ingredient temperature. This works great for sauces, sugar work, poaching, and more. The integrated probe can also be used in thermometer mode to monitor the core temperature of solid foods like steaks, cutlets, and filets. Thermometer mode just reads the temperature and does not control it the same way that probe control does. Probe Control oil is for deep frying when the probe is immersed in oil.
