Joule’s maximum operating temperature at sea level is 208 °F / 98 °C. At any other altitude, the max operating temperature is 3.6 °F / 2 °C below the local boiling point.
- Although Joule can be set to a maximum temperature of 208 °F / 98 °C, it's not recommended to run Joule at this temp for extended periods of time. The higher the temperature, the harder Joule has to work to maintain that temperature. So, at the very least, you should make sure your cook setup insulates the bath container the best it can for higher temps to reduce heat dissipation and as a result Joule will not have to work as hard. The practical maximum temp we recommend is 195 °F / 90 °C which is more than enough for most sous vide recipes.
The minimum temperature that can be set for Joule is 68 °F / 20 °C. Joule's internal thermometer will report temperatures below this, but this is the minimum temperature that can be set for a cook.
- A question we get from time to time is whether or not Joule can be used to cool / chill water. It cannot do this natively, nor does it have a mode where it's just circulation only. Joule is designed to heat and circulate simultaneously.
